About Us

Willi Lehner is of Swiss descent who’s father was also a cheese maker. Born and raised in the Driftless Region of southwest Wisconsin. The high calcium soils are crucial to making great cheese, hence we only make our cheeses when cows have access to lush pastures.

About Our Products

Since we only make cheese when the cows are on the best pasteurs, we want the grass aromatics to come through in the final product. Our "cave aged" cheeses are slowly ripened at cave like temperature and humidity to coax out these subtle aromas. In addition studies have shown the multitude of health benefits of pasteur based animal husbandry.
