WI Whisk Recipe of the Week - Shredded Beet Salad with citrus and herbs


Salad can come in all shapes and colors.  This simple and vibrant-hued beet salad from Wisconsin Fun Next Exit is a great compliment to whatever you're throwing on the grill for supper or the perfect weekday lunch!


  • 1 bunch beets
  • 1 handful fresh herbs
  • The juice of one lemon and one lime
  • a splash orange juice
  • a glug olive oil (or substitute sunflower oil)
  • to taste salt and pepper


Shred the beets in a bowl. Combine the rest of the ingredients in a jar and give it a good shake. Pour dressing over the beets. Enjoy as is, or mix with spinach/arugula/ lettuce.

Recipe Season
