WI Whisk Recipe of the Week - Spinach Goat Cheese Dip

This easy-to-prepare dip is perfect for your Super Bowl entertaining.
- 1 1/2 cups fresh spinach, washed
- 1 tsp lemon juice
- 1 small shallot sliced (about 1 tsp)
- 1/4 tsp sea salt
- 2 tbs olive oil
- 4 oz goat cheese
Add all ingredients except for the cheese to a food processor and blend for 2 minutes. Next, add goat cheese and continue to process another minute. Serve immediately or refrigerate overnight.
Serve with crackers.
