Slurpable Summer Soups

Winter may get all the soup and stew glory, but why not turn the market bounty of spring and summer into a vibrant meal-in-a-bowl?  Get your spoons ready!

With the exciting arrival of shell peas, we think that pea soup deserves a bit of an image upgrade.  Pea soup doesn't have to be a thin, tasteless, pale green mess!  It can be vibrant and fresh like in this 'Possibly the Best Pea Soup' recipe featuring fresh shell peas, tarragon, and - of course - some half and half.

Have you sauteed, roasted, and grilled your way through the bundles and bundles of asparagus? Time to turn it into a creamy soup!  This would be great paired with toasted baguette topped with mashed green garlic from market and a sprinkling of salt.

When it heats up, a cold soup like gazpacho works perfectly.  Grab tomatoes, cucumbers, and green onions from market!  Cooking tip: when melon season is upon us, make it again but add cubed watermelon on top of the gazpacho for delicious flavor and sweetness!

Tasty, bitter greens like bok choy and kale become tender when stirred into a brothy soup - try this parmesan broth with kale and white beans or this bok choy and chicken soup.
