WI Whisk Recipe of the Week - Brussels Sprouts and Apple Slaw

This recipe just might make you a brussels sprouts lover. The simple ingredients come together in one tasty slaw, great as a side dish or use for a taco topping.

- 30 medium Brussels Sprouts (about 2 pounds)be
- 1 medium apple
- 2 T. apple cider vinegar
- 1/4 c. olive oil (or sub sunflower oil!)
- 2 T. mayonnaise
- 2 green onion, white parts chopped
- 1 t. salt - added just before serving
Whisk together vinegar, olive oil, mayo and green onions. Shred Brussels sprouts in a food processor or thinly slice lengthwise. Toss grated apple and Brussels sprouts in bowl and mix in dressing. Refrigerate for an hour and add salt just before serving.
