5 Ways to Rock Those Salad Greens (that do not involve salad!)

As much as we absolutely adore salads, we understand that salad boredom can be a very real thing! Are you looking for ways to enjoy the delectable salad greens available around Market, without eating another boring salad?!?

Here are 5 Ways to Rock Those Salad Greens!

1.  Make a Smoothie - toss those greens (especially the less bitter ones like spinach and bibb lettuce) into your favorite green smoothie. We love combining greens with apples, cucumbers, peanut butter, and almond milk for a healthy riff on a favorite snack - apples and PB!

2. Make a Bed for Your Eggs - tender greens like arugula and watercress and runny eggs (soft boiled, fried with runny yolks, or even poached) are a match made in heaven! Skip the dressing and place your cooked egg(s) right over a mess of delicious spring greens. When broken, the yolk coats the greens and you get to enjoy all the goodness!  

3. Make a Pesto - Basil doesn't have to have all the fun. We love making pestos from arugula and other bitter greens. Here's one of our favorite recipes.

4. Go Low-Carb - forget the buns (for a minute...) and eat your burgers, brats, or even tacos in a lettuce leaf wrapper!  Bibb and Boston lettuce both work well.  

5. Wilt Them (on purpose!) - Create depth of flavor (and more variety to your repertoire) by quickly wilting spring greens, like this delicious recipe for sauteed spring greens with bacon and mustard seeds.  Keep your eye out for mizuna...it's our favorite green to combine with bacon!
