The oats become tender overnight and with just a little stir in the morning, your breakfast is ready. Why not make a savory version and enjoy for breakfast or lunch? This recipe from Inspired by the Seasons features asparagus and green onions - two common finds at market this time of year.
Ingredients
- 1/4 c oats
- 1/4 c almond milk (cow's milk works too)
- 1/2 c plain Greek yogurt
- 1/2 tsp ground turmeric
- 1 T minced green onions
- 1 stalk asparagus, sliced into strips using a vegetable peeler
- 1 tsp fresh lemon juice
- 1/8 tsp black pepper
- 1 tsp olive oil
- 1 T chopped pistachios for garnish
Preparation
Combine oats, yogurt, milk, turmeric, pepper and green onions into a lidded jar with a 1 c capacity. In another container add lemon juice, asparagus and olive oil. Place both in the refrigerator overnight. Combine in the morning and top with pistachios.
